Colonial Brewing during Fall Fest

Okay, it looks like we will be soaked today but only showers tomorrow. The brewery is loaded up and soon to be on its way to Ridley Park. Tomorrow, I plan to break from my normal brewing routine and make Pumpkin Beer (NOT pumpkin spice, but an all grain variant of my own Flippen Pompkin Ale.

I will roast the pumpkin today at home (colonial purist will place a whole pumpkin in the under coals for about 2 hours — ie dig small pit, put in pumpkin, cover with coals, wait). Our recipe for tomorrow will be a bit simpler:

Malt Bill:

  • 12 lbs Pale 2-Row malt
  • 1 lb Molasses (brown sugar)
  • 1 large pumpkin — roasted

Hops Bill:

  • 8 oz Centenial Saaz Hops (grown in Ambler, PA) — boil
  • 4 oz Saaz Hops — dry hop

Adjunct Bill:

  • 2 oz Cinnamon
  • 1 oz nutmeg

Brewing steps:

  1. Prep Pumpkin by dicing and roasting for 2 hours at 400F (or as described above). This diced pumpkin is added to the initial boil strike water then filtered out during lauter.
  2. Mash grains in kieve for 90 min (or longer if crowds ask questions)
  3. 1 hour wort boil (or longer if crowds ask questions) with hop addition at the 30 min mark then chill in kuhlschipp for 45 min.
  4. After wort is transferred to proper fermenters add yeast and spices. Ferment 10 days then rack to secondary for an additional 10 days. Bottle condition for 2 weeks.

This beer will be available for tasting at Elfreth’s Alley’s Deck the Alley 2023 on Saturday, December 9, 2023 where I will be hosting a Colonial Tavern (beer, cocktails, stories, and games) from 2:00 PM 6:00 PM

The farm is open from 11 AM to 4 PM with last admission at 3 PM.
